The ultimate prawn cocktail
- 2 avocados – 1 finely chopped, 1 very finely sliced
- Juice of 1 lemon (reserve some for the sauce)
- ½ cucumber, finely chopped
- 2 Baby Gem lettuces, finely sliced
- 100g good-quality mayonnaise
- 1tsp smoked paprika
- 1tsp cayenne pepper
- Black pepper
- 1-2tbsp hot sauce
- 380g Extra Special Large Cold Water Prawns
- 1 Baby Gem lettuce into 6
Take the avocados and dress generously with the juice of a lemon (reserve some for the sauce).
Divide ½ cucumber, Baby Gem lettuces, and the chopped avocado between 6 serving glasses.
Mix good-quality mayonnaise, smoked paprika, cayenne pepper and black pepper with 1-2tbsp hot sauce (we used French’s Louisiana BBQ) and lemon juice to taste. Mix with prawns, divide between the glasses and sprinkle with more smoked paprika
Cut Baby Gem lettuce into 6. Add to the glasses with the avocado slices. Serve with lemon wedges.
