Ingredients
  • 2 avocados – 1 finely chopped, 1 very finely sliced
  • Juice of 1 lemon (reserve some for the sauce)
  • ½ cucumber, finely chopped
  • 2 Baby Gem lettuces, finely sliced
  • 100g good-quality mayonnaise
  • 1tsp smoked paprika
  • 1tsp cayenne pepper
  • Black pepper
  • 1-2tbsp hot sauce
  • 380g Extra Special Large Cold Water Prawns
  • 1 Baby Gem lettuce into 6
Method
  • Take the avocados and dress generously with the juice of a lemon (reserve some for the sauce).

  • Divide ½ cucumber, Baby Gem lettuces, and the chopped avocado between 6 serving glasses.

  • Mix good-quality mayonnaise, smoked paprika, cayenne pepper and black pepper with 1-2tbsp hot sauce (we used French’s Louisiana BBQ) and lemon juice to taste. Mix with prawns, divide between the glasses and sprinkle with more smoked paprika

  • Cut Baby Gem lettuce into 6. Add to the glasses with the avocado slices. Serve with lemon wedges.
