Prawn, lemon and chilli courgetti
- 100g spaghetti
- 150g Asda Cooked & Peeled King Prawns
- 2tsp rapeseed oil
- 1 medium courgette
- Zest and juice 1 lemon, plus wedges to serve
- 1 red chilli, thinly sliced
- 1tbsp chopped parsley
Cook the pasta according to the pack instructions. Drain and return to the pan.
Heat a griddle pan to hot; toss the prawns in the oil and cook for 5 mins or until piping hot with char marks.
Meanwhile, use a spiraliser to cut the courgette into noodles, or use a veg peeler to shave into ribbons.
Gently toss the pasta with the courgetti and the lemon juice. The heat from the pan will soften the courgetti.
Add the griddled prawns, lemon zest and chilli. Divide between 2 plates, twirling the pasta and courgetti into ‘nests’. Sprinkle with the parsley and serve with the lemon wedges, to squeeze.
