Ingredients
- 3 eggs
- 135g caster sugar
- Large pinch salt
- 190g butter
- 350ml semi-skimmed milk
- 900g plain flour
- 2 x 7g sachets easy bake yeast
- 100g soft light brown sugar
- 2 tbsp ground cinnamon
- 150g icing sugar
- 2-3 tbsp cold water
Method
Beat the eggs, caster sugar and salt together in a large bowl.
Put 90g butter and the milk in a pan and heat very gently until melted. When tepid, stir into the egg mixture.
Stir in half the flour. Add the yeast and the remaining flour and knead by hand or with a dough hook for 4-5 mins until smooth and soft. If the mixture is a little dry add 1-2 tbsp extra milk.
Put in an oiled bowl, cover with oiled cling film and leave to prove in a warm place for 1 hour or until doubled in size.
Preheat oven to 210C/190C Fan/Gas 7. Roll out the dough on a lightly floured surface to a 45 x 30cm rectangle.
Beat the remaining butter, cinnamon and brown sugar together and spread evenly over the dough. Roll up from one short end and slice into 20. Arrange on lined baking sheets well spaced apart.
Bake for 15 mins or until well-risen and pale-golden brown.
Sift the icing sugar. Stir in enough water to make a thick, spoonable icing and drizzle all over the warm buns. Serve warm.
