Ingredients
  • 400g Asda Frozen Mixed Vegetables
  • 2 spring onions
  • 200g Asda Classic Mash
  • 20g Parmesan
  • 1 egg yolk
  • 1 tbsp plain flour
  • 1 tbsp oil
  • 2 tbsp reduced-fat crème fraÎche
  • 1 pinch of cayenne pepper
  • 80g washed baby leaf spinach
Method
  • Preheat the oven to 180C/160C Fan/Gas 4.

  • In a large bowl, mix together 400g Asda Frozen Mixed Vegetables, 2 spring onions, finely sliced, 200g Asda Classic Mash, 20g Parmesan, finely grated, 1 egg yolk and 1tbsp plain flour.

  • With wet hands, shape the mixture into 8 fritters.

  • Put on a plate and chill until ready to cook.

  • Heat 1tbsp oil in a frying pan. Cook the fritters for 5-6 mins on a medium-low heat until golden- brown on the outside and piping hot all the way through.

  • Cook in 2 batches, reserving the oil after the first batch.

  • Mix 2tbsp reduced-fat crème fraÎche with ¼tsp cayenne pepper.

  • Stack 2 fritters on each plate.

  • Divide 80g washed baby leaf spinach between the plates, add a good dollop of the seasoned crème fraîche, then serve immediately.
