Rainbow salad rolls
- 500g spring greens
- 200g Asda 30% Less Fat Houmous
- 1 avocado
- 1 carrot
- 1 red pepper
- ½ cucumber
Remove the woody stems from the spring greens. For each roll, overlap 2 leaves to give a rectangle shape and spread with the houmous. Thinly slice the avocado and cut the carrot, pepper and cucumber into matchsticks. Divide between the leaves, sprinkle with torn mint and coriander and roll up tightly.
Wrap in baking paper and store in the fridge for up to 2 days.
