To make your own simple syrup, heat 100g caster sugar and 100ml water in a pan – do not allow to boil. When the sugar dissolves, remove from the heat and stir in another 100g caster sugar. Strain into a lidded jar and leave to cool – the syrup can be stored in the fridge for up to 6 months.

  • 25g raspberries, plus a few extra to garnish
  • 20ml sugar syrup
  • 50ml Absolut Raspberri
  • 25ml lemon juice
  • 150ml soda water
  • Put the raspberries into a tall highball glass and muddle with the end of a wooden spoon.

  • Add a handful of ice and the sugar syrup, Absolut Raspberri and lemon juice. Stir together with the spoon, then top up with the soda water.

  • Garnish with the extra raspberries to serve.
