- 1 lime, thinly sliced and chopped
- Juice of ½ lime
- 75g raspberries
- 3 sprigs mint, leaves picked
- 1tbsp demerara sugar
- 50ml Bacardi Superior white rum
Cut 2 thin slices of lime to reserve as a garnish.
Chop the rest and roughly mix in a jug with the lime juice, raspberries, mint sprigs, sugar and rum.
Divide between 2 tall glasses, then top up with ice and stir. Garnish with the reserved lime and extra mint sprigs.
