Raspberries give this mojito recipe a fruity twist

Raspberry mojito
  • Prep: 10 Mins

  • Serves: 2

  • 1 lime, thinly sliced and chopped
  • Juice of ½ lime
  • 75g raspberries
  • 3 sprigs mint, leaves picked
  • 1tbsp demerara sugar
  • 50ml Bacardi Superior white rum
  • Cut 2 thin slices of lime to reserve as a garnish.

  • Chop the rest and roughly mix in a jug with the lime juice, raspberries, mint sprigs, sugar and rum.

  • Divide between 2 tall glasses, then top up with ice and stir. Garnish with the reserved lime and extra mint sprigs.
