Ingredients
  • 2 large red onions, sliced
  • 2 eggs, beaten
  • 125g plain flour
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1 tbsp fresh coriander, chopped, plus a few leaves, to garnish
  • 2 tbsp vegetable oil
  • 1 ripe mango, peeled and stoned
  • 1 tsp cider vinegar
  • 2 tbsp apple juice
Method
  • Mix the onions and eggs in a bowl. Sift in the flour and spices, add the coriander and stir to combine.

  • Heat 1 tbsp oil in a frying pan. Add spoonfuls of the mixture and cook for 1 minute on each side. Repeat with the remaining mixture, adding more oil as you go.

  • Blitz the mango in a food processor with the vinegar and apple juice. Top the bhajis with coriander leaves.
