Red onion relish
- 2 red onions, halved and finely sliced
- 2 level tbsp brown sugar
- 4 tbsp red wine (or red grape juice)
- 1 tsp fresh thyme leaves, chopped
- 3 tbsp balsamic vinegar
Fry the onions over a low heat until soft and translucent.
Sprinkle on the sugar, red grape juice or red wine, thyme and balsamic vinegar. Cover and simmer for 3 minutes
Simmer, uncovered, stirring often, until sticky and dark red in colour.
