Ingredients
  • 20g unsalted butter
  • 3tbsp caster sugar
  • 300g plums, halved and stoned
  • 3 eggs
  • 300ml semi-skimmed milk
  • 75g plain flour
  • 1tsp vanilla extract
  • ½tsp cinnamon
  • 2tbsp icing sugar, plus a little extra, to serve
Method
  • Preheat the oven to 180C/ 160C Fan/Gas 4.

  • Grease a 1L shallow dish with the butter.

  • Sprinkle 1tbsp caster sugar in the base, arrange the plums on it, cut-side down, and sprinkle with the remaining sugar.

  • Beat together all the remaining ingredients until smooth. Strain through a sieve over the fruit, pressing any lumps through with the back of a spoon. Leave to rest for 15 mins.

  • Bake for 45-50 mins until firm, well-risen and golden brown.

  • Leave to stand for 5 mins, dust lightly with icing sugar and serve warm.
