Rhubarb fool with gin liqueur
- 540g tin Asda Rhubarb in Light Syrup
- 3tbsp Extra Special Rhubarb & Ginger Gin Liqueur
- Pink gel food colouring (optional)
- 200ml whipping cream
- 2tbsp icing sugar
- 100g Asda Natural Fat Free Fromage Frais
- ½ tsp vanilla extract
Drain the tin of rhubarb, reserving 3tbsp of the syrup. Set the rhubarb aside.
Add the rhubarb liqueur to the syrup along with a dot of pink gel food colouring. Mix together until well combined, then gently stir in the rhubarb until coated.
In a separate bowl, whip the cream and icing sugar to soft peaks. Fold in the fromage frais and vanilla extract.
To assemble, spoon some of the cream into the bottom of 6 clean jars and top with a layer of the rhubarb. Repeat with more cream then more rhubarb. Chill in the fridge until it’s time to serve.
