Ingredients
  • 1 Asda Extra Special Welsh Borders Lamb Leg Joint with Garlic and Herbs
  • 500g Asda Extra Special Sweet Vine Tomatoes
  • 1 tbsp olive oil
  • 4 tbsp white wine
Method
  • Pre-heat the oven to 190C/170C Fan/Gas 5. Put the meat in a roasting tin and cook for 25 minutes per 500g, plus an extra 25 minutes for medium.

  • Remove the lamb from the oven. Transfer to a large plate and leave to rest in a warm place, covered in foil, for about 15 minutes. Set aside the tin and keep the juices to make the sauce.

  • Snip the tomatoes into six bunches but leave on the vine. Put on to a baking sheet and drizzle over the oil. Season. Bake in the oven for about 10 minutes or until the skins start to burst.

  • Put the roasting tin over a medium heat and add wine. Using a wooden spoon, scrape up all the crispy bits on the base of the tin (you may need to add a little boiling water). Bring to the boil and simmer for 1 minute. There won't be a lot of sauce but it will be delicious.

  • Carve the meat, adding any juices to the sauce.

  • Put the lamb on a warmed serving dish and serve with the tomatoes and sauce.
