Warm roast vegetable cous cous
- 1 Grower’s Selection Bumper Root Veg Pack
- 2tsp garam masala
- 200g Asda Cous Cous
- 60g rocket
- 4tbsp Asda Light Lemon & Pepper Dressing
- 2tsp rapeseed oil
Preheat the oven to 200C/180C Fan/Gas 6.
Peel the root vegetables and chop into bite-sized chunks. Toss in a large roasting tin with the rapeseed oil and garam masala until the chunks of veg are well coated.
Roast for 35-40 mins or until the veg is tender.
Meanwhile, put the cous cous in a large bowl and add 200ml boiling water. Stir and cover with clingfilm or a lid, then set aside for 6-8 mins to allow the cous cous to absorb the water.
Stir the roasted veg and rocket into the cous cous.
To serve, divide between 4 plates and drizzle over the dressing.
