Roasted banana with honey and pistachios smash toast
- 2 bananas
- 2tsp clear honey
- 2 slices seeded bread
- 1tbsp light mascarpone
- 1tbsp pistachios
Preheat the oven to 180C/160C Fan/Gas 4. Line a baking tray with baking paper.
Peel the bananas and cut in half lengthways. Arrange on the baking tray, drizzle with 1tsp clear honey and bake for 15 mins until caramelised.
Toast the bread until golden, then spread with the mascarpone.
Top the toast with the roasted banana, then drizzle over 1tsp clear honey. Roughly chop the pistachios and sprinkle over the top.
