Ingredients
  • 2 bananas
  • 2tsp clear honey
  • 2 slices seeded bread
  • 1tbsp light mascarpone
  • 1tbsp pistachios
Method
  • Preheat the oven to 180C/160C Fan/Gas 4. Line a baking tray with baking paper.

  • Peel the bananas and cut in half lengthways. Arrange on the baking tray, drizzle with 1tsp clear honey and bake for 15 mins until caramelised.

  • Toast the bread until golden, then spread with the mascarpone.

  • Top the toast with the roasted banana, then drizzle over 1tsp clear honey. Roughly chop the pistachios and sprinkle over the top.
