- 3 peppers (red and yellow)
- 2 tbsp olive oil
- 1 tbsp flat-leaf parsley
Cut the peppers into quarters and remove the seeds and white pith.
Grill the peppers, skin-side up, until the skin blisters and starts to turn black. Put them in a freezer bag and leave for 10 minutes to cool – this will loosen the skin.
Peel off the skin and cut the peppers into strips. Toss with the olive oil and flat-leaf parsley. Season to taste.
