Roasted tenderstem broccoli
- 500g tenderstem broccoli
- 1tbsp rapeseed oil
- 1 small red chilli, deseeded and finely sliced
- 2 garlic cloves, peeled and thinly sliced
- 20g flaked almonds
- 1 lemon, juice and zest
Preheat the oven to 200C/180C Fan/Gas 6.
Cook the broccoli in boiling water for 1 min. Drain and leave to steam dry for 2 mins.
Toss the broccoli in the oil, chilli, garlic, almonds and a grind of freshly ground black pepper. Roast in the oven for 10mins until lightly crisp.
Drizzle with lemon juice and zest and serve.
