Ingredients
  • 1 aubergine
  • 2 courgettes
  • 2 red peppers (or yellow peppers), quartered and de-seeded
  • 1 red onion
  • 3 tbsp olive oil
  • 125g baby-plum tomatoes
  • 1 tsp dried oregano
  • 8 Asda Tortilla Wraps
  • 200g Cheddar cheese, crumbled
  • Salad, to serve
Method
  • Pre-heat the oven to 220C/200C Fan/Gas 7. Cut the aubergine, courgettes, peppers and onion into 1cm pieces. Place in a roasting tin and drizzle over the oil. Toss everything together so all the vegetables are coated. Cook in the oven for 15 minutes.

  • Halve the tomatoes and scatter on top of the vegetables. Cook for another 5-10 minutes or until all the vegetables are cooked. Tip into a bowl, add the herbs, season and mix together.

  • Put 4 tortillas on a work surface and sprinkle with half the cheese. Divide the veg between them and sprinkle with the remaining cheese.

  • Put the rest of the tortillas on top and press together lightly to make quesadillas. Heat a large frying pan and gently fry the quesadillas one at a time, over a low heat. Do this for 3-4 minutes on each side until the tortillas are golden brown on the outside and the cheese has melted inside.

  • Cut the quesadillas into wedges and serve with salad.
