Ingredients
  • 250g new potatoes, quartered or halved
  • 3 tbsp mild olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp honey
  • 4 baby gherkins, sliced
  • 1 tbsp chopped chives
  • 6 cherry tomatoes, halved
  • Handful of rocket
  • 260g Asda Rollmops
Method
  • Boil the potatoes until just tender. Drain and put in a large bowl. Put the oil, vinegar, mustard and honey in a lidded jar, and season. Shake to blend. Add to the warm potatoes, toss, then cool.

  • Stir in the gherkins, chives, tomatoes and rocket.

  • Serve with the rollmops.
