Sage and onion boulangere

- 170g Gruyère cheese, grated
- 1kg Extra Special Marabel Potatoes, washed and very thinly sliced
- 3 onions, thinly sliced
- 12 fresh sage leaves
- 300ml stock, made with 1 reduced-salt vegetable stock cube
Preheat the oven to 180C/160C Fan/Gas 4.
Set aside 2 handfuls of the Gruyère. Put a thin layer of potatoes over the base of an ovenproof dish and cover with a thin layer of onions and Gruyère. Scatter over a few sage leaves and freshly ground black pepper. Repeat the layers, seasoning each set. Top with a layer of potatoes.
Pour over the stock, scatter with the remaining sage leaves and season with black pepper, then
put in the oven for 1 hr.
Scatter over the reserved Gruyère, then return to the oven for 30 mins, turning it up to 200C/180C Fan/Gas 6. Serve hot.
