Sausage and caramelised onion jackets
- 4 baking potatoes
- 1tsp rapeseed oil
- 4 reduced-fat sausages
- 2 large white onions, finely sliced
- 2 cloves garlic, finely sliced
- 2tsp brown sugar
- 1tbsp balsamic vinegar
- 100g kale
Preheat the oven to 200C/180C Fan/Gas 6.
Prick the baking potatoes with a fork, put on a baking tray and bake in the oven for 50 mins until soft in the middle.
Meanwhile, heat the oil in a pan over a medium heat, add the sausages and cook until browned evenly all over.
Add the onions, to the pan and cook for 5 mins until softened. Add the garlic and cook for 2 mins. Add the brown sugar and balsamic vinegar, then increase the heat and cook for 5 mins until the onions are caramelised.
Add the kale to the pan and cook for a further 5 mins.
Cut the baked potatoes in half, lengthways. Break up the flesh with the back of a fork and fill with the sausages, onions and kale. Serve the baked potatoes immediately.
