Sausage, mixed bean and kale casserole
- 1tbsp rapeseed oil
- 400g pack Extra Special 6 Light & Lean Pork Sausages
- 200g Frozen for Freshness Vegetable Base Mix
- 2 cloves garlic, crushed
- 3tbsp tomato purée
- ½tsp dried mixed herbs
- 2 x 400g tins Asda Mixed Beans in Tomato Sauce
- 100g kale, washed
Heat a little oil in a deep-sided frying pan. Cook the sausages for 6-8 mins on high, to brown. Set aside.
In the same pan, heat the remaining oil and fry the veg mix and garlic for 5-6 mins, stirring, until starting to colour.
Return the sausages to the pan; stir in the tomato purée and herbs. Season with black pepper. Add the beans and 200ml water.
Bring to a simmer and cook for 10 mins, uncovered, until reduced. Stir through the kale and cook until wilted before serving.
