Sausage potato salad
- 454g pack Asda British Cumberland Sausages
- 400g new potatoes
- 2 tbsp olive oil
- 1 tbsp cider vinegar
- 1-2 tsp coarse grain mustard
- 4 spring onions, trimmed and sliced
- 100g radishes, sliced
- 2 sticks celery, sliced
- 4 baby gherkins, sliced
- 4 tbsp Asda Good For You Mayonnaise
Cook the sausages to pack instructions. Cool and cut into thick slices.
Boil the new potatoes until just tender. Drain and when cool enough to handle, cut into chunks.
In a large bowl, whisk the oil, vinegar and mustard together and season to taste. Add the warm potatoes and toss to coat. Leave until cool.
Add the spring onions, radishes, celery, baby gherkins and mayonnaise to the bowl. Stir in the sliced sausages, toss well to combine and serve.
