Ingredients
  • 1tsp olive oil
  • 1 romaine lettuce
  • 200g frozen peas
  • 1 small bunch fresh mint
  • 15g butter
  • 250ml beef stock
  • 1 pack Asda Butcher’s Selection lamb chops (4 chops in a pack)
Method
  • Season the lamb chops and place on a tray under a hot grill for 4 to 5 minutes.

  • Meanwhile cut the romaine lettuce into quarters lengthways. Drizzle the oil into a large hot frying pan and sear the lettuce until charred.



  • Add the stock and mint, bring to the boil and reduce by half.

  • Add the butter, season and reduce by half again. Serve with the lamb chops.
