Ingredients
  • 3 tbsp light olive oil
  • 1 large onion, sliced
  • 1/4 tsp dried parsley
  • 1/4 tsp dried cumin
  • 1/4 tsp cayenne pepper
  • 2 peppers (yellow and red), de-seeded and sliced
  • 4 tomatoes, chopped
  • 2 tsp brown sugar
  • 2 tsp chopped thyme leaves
  • Pinch of saffron (optional)
  • 4 eggs
  • 2 tbsp chopped coriander
  • Crusty bread, to serve
Method
  • Heat the oil in a large pan, add the onion and cook for 2 minutes. Add the parsley, cumin and cayenne, and cook for 1 minute. Add the peppers, tomatoes, sugar, thyme and saffron, if using.

  • Add 8 tbsp water and simmer for 15 minutes, adding a little more water if too thick.

  • Make 4 gaps in the sauce and crack an egg into each one. Cover and cook for 10-12 minutes, until the eggs are just set. Top with coriander and serve with bread.
