Ingredients
  • 4 tbsp olive oil
  • 1 garlic clove, crushed
  • 1 sprig rosemary
  • 1 lemon, zest of
  • 4 x 300g cans Asda Cannellini Beans, drained and rinsed
  • 2 tbsp flat-leaf parsley, chopped
Method
  • Put 3 tbsp of the olive oil in a pan with the garlic and rosemary and heat very gently for 2 minutes until the garlic is just cooked.

  • Add the grated lemon zest, turn off the heat and set aside for 5 minutes.

  • Remove the rosemary sprig. Add beans and heat through, stirring with a wooden spoon and pressing the beans lightly against the side of the pan to smash, but not mash them.

  • Stir in the flat-leaf parsley and transfer to a serving dish. Drizzle with 1 tbsp olive oil before serving.
