Smashed white beans

- 4 tbsp olive oil
- 1 garlic clove, crushed
- 1 sprig rosemary
- 1 lemon, zest of
- 4 x 300g cans Asda Cannellini Beans, drained and rinsed
- 2 tbsp flat-leaf parsley, chopped
Put 3 tbsp of the olive oil in a pan with the garlic and rosemary and heat very gently for 2 minutes until the garlic is just cooked.
Add the grated lemon zest, turn off the heat and set aside for 5 minutes.
Remove the rosemary sprig. Add beans and heat through, stirring with a wooden spoon and pressing the beans lightly against the side of the pan to smash, but not mash them.
Stir in the flat-leaf parsley and transfer to a serving dish. Drizzle with 1 tbsp olive oil before serving.
