Ingredients
  • 1tbsp olive oil
  • 1 red onion, finely sliced
  • 2 cloves garlic, crushed
  • 1 green chilli, sliced
  • 2tsp smoked paprika
  • 300g can Asda Mexican Style Bean Mix, drained and rinsed
  • 400g can tomatoes
  • 1 yellow pepper, deseeded and sliced
  • 20g coriander, chopped
  • Juice and zest 1 lime
  • 2tbsp natural fat-free yogurt
  • 4 wholemeal tortilla wraps
  • 40g rocket
Method
  • Heat the oil in a frying pan over a medium heat. Add the onion, garlic, chilli and 1tsp smoked paprika and fry for 8 mins, stirring, until golden and soft.

  • Mix in the beans, tomatoes and 200ml boiling water. Simmer for 20 mins, stirring occasionally, until the beans start to break down and the excess liquid has evaporated.

  • Add the pepper and cook for 5 mins, then stir in the coriander and lime juice.

  • Mix together the remaining smoked paprika, lime zest and yogurt.

  • Warm the tortilla in the microwave for 30 secs then fill with the bean mix and top with the rocket and drizzle with the yogurt.
