Smoky bean fajitas
- 1tbsp olive oil
- 1 red onion, finely sliced
- 2 cloves garlic, crushed
- 1 green chilli, sliced
- 2tsp smoked paprika
- 300g can Asda Mexican Style Bean Mix, drained and rinsed
- 400g can tomatoes
- 1 yellow pepper, deseeded and sliced
- 20g coriander, chopped
- Juice and zest 1 lime
- 2tbsp natural fat-free yogurt
- 4 wholemeal tortilla wraps
- 40g rocket
Heat the oil in a frying pan over a medium heat. Add the onion, garlic, chilli and 1tsp smoked paprika and fry for 8 mins, stirring, until golden and soft.
Mix in the beans, tomatoes and 200ml boiling water. Simmer for 20 mins, stirring occasionally, until the beans start to break down and the excess liquid has evaporated.
Add the pepper and cook for 5 mins, then stir in the coriander and lime juice.
Mix together the remaining smoked paprika, lime zest and yogurt.
Warm the tortilla in the microwave for 30 secs then fill with the bean mix and top with the rocket and drizzle with the yogurt.
