Ingredients
- 100g leftover Butcher's Selection Roast in the Bag Mexican Pork Loin Joint
- 1 tbsp sunflower oil
- 1 red onion
- 1 green pepper
- 1 red pepper
- Packet of fajita seasoning mix
- 4 tortilla wraps
- Soured cream, to serve
- Salsa, to serve
Method
Heat 1 tbsp sunflower oil (or use leftover juices from the pork) in a pan over a medium heat.
Slice the pork, peppers and red onion into thin strips.
Add to the frying pan with a good dusting of fajita seasoning mix and fry for 6-8 minutes.
Place the filling in the middle of a warm tortilla wrap and fold in the edges before rolling. Serve with soured cream and salsa.
