Ingredients
  • 100g leftover Butcher's Selection Roast in the Bag Mexican Pork Loin Joint
  • 1 tbsp sunflower oil
  • 1 red onion
  • 1 green pepper
  • 1 red pepper
  • Packet of fajita seasoning mix
  • 4 tortilla wraps
  • Soured cream, to serve
  • Salsa, to serve
Method
  • Heat 1 tbsp sunflower oil (or use leftover juices from the pork) in a pan over a medium heat.

  • Slice the pork, peppers and red onion into thin strips.

  • Add to the frying pan with a good dusting of fajita seasoning mix and fry for 6-8 minutes.

  • Place the filling in the middle of a warm tortilla wrap and fold in the edges before rolling. Serve with soured cream and salsa.
