- 2 Extra Special Sorrento Lemons
- 5 tbsp sugar
- 100ml hot water
- 600ml sparkling water
- 10 mint leaves
Roll the lemons or squeeze them in the palm of your hand to get the juices moving around so the lemon will give more juice.
Cut the lemons into halves and squeeze them into a bowl to release the juice (squeeze lemons through a sieve to ensure no pips go into the lemon juice).
Dispense the hot water into a pitcher, add the sugar and stir well until the sugar is dissolved. Next, top up with sparkling water.
Pull the mint leaves from the stem and roughly chop before adding to the lemonade for added flavour. Best served chilled.
