Spinach filo pie
- 650g frozen chopped spinach
- 125g frozen chopped onion
- 2 tsp dried oregano
- 400g Asda Greek Feta, crumbled
- 2 eggs, lightly beaten
- 270g pack Asda Frozen Filo Pastry, thawed
- 50g butter, melted
Pre-heat the oven to 180C/160C Fan/Gas 4. Cook the spinach and onion with 3 tbsp water until thawed, drain in a sieve and press to extract all the water. Mix the spinach and onion with the oregano, feta and eggs.
Grease a small roasting tin. Cut sheets of filo in half and cover with a damp tea towel. Brush five pieces with butter and layer in the tin. Fill with the mixture.
Brush the remaining filo with butter, crumple with your hand and put on top. Trim the edges and bake for 35-40 minutes.
