Spinach, prawn & mango salad
- 2 tbsp groundnut oil (or sunflower oil)
- 2 tbsp lemon juice
- 2 tbsp light soy sauce
- 1 tsp clear honey
- 1 tsp grated root ginger
- 1 red chilli, de-seeded and finely chopped (optional)
- 2 ripe mangoes
- 160g bag Asda Baby Spinach
- 78g bag Asda Wild Rocket
- 2 x 175g packs Asda King Prawns
Whisk together the oil, lemon juice, soy sauce, honey and ginger. Set aside for 20 minutes, then pass through a sieve to remove any solid pieces. Stir in the chilli if desired.
Peel, stone and slice the mangoes. Divide the spinach and rocket leaves between four dishes. Top with the prawns and mango, then toss in the honey and ginger dressing.
