Ingredients
  • 2 tbsp groundnut oil (or sunflower oil)
  • 2 tbsp lemon juice
  • 2 tbsp light soy sauce
  • 1 tsp clear honey
  • 1 tsp grated root ginger
  • 1 red chilli, de-seeded and finely chopped (optional)
  • 2 ripe mangoes
  • 160g bag Asda Baby Spinach
  • 78g bag Asda Wild Rocket
  • 2 x 175g packs Asda King Prawns
Method
  • Whisk together the oil, lemon juice, soy sauce, honey and ginger. Set aside for 20 minutes, then pass through a sieve to remove any solid pieces. Stir in the chilli if desired.

  • Peel, stone and slice the mangoes. Divide the spinach and rocket leaves between four dishes. Top with the prawns and mango, then toss in the honey and ginger dressing.
