Easy sponge recipe

- 225g caster sugar
- 225g softened butter
- 225g self-raising flour, sieved
- 4 medium eggs
- 1tsp vanilla extract
Preheat the oven to 180C/ 160C Fan/Gas 4. Grease and line your tin. The size of the tin will vary depending on what recipe you are using.
Beat all the ingredients in a large mixing bowl with an electric hand-whisk for 3-4 mins. Spoon into the tin, level the surface and bake for 1 hr – 1hr 20 mins, depending on the tin size. To test, a metal skewer inserted into the centre of the sponge should come out clean. Cool in the tin for 5 mins then turn out onto a cooling rack. Cool completely before decorating.
