Sprout leaves with walnuts and Parmesan
- 200g Brussels sprouts
- 1 tbsp olive oil
- 1/2 tsp smoked paprika (optional)
- 50g walnuts, chopped
- 50g Parmesan, finely grated (or veggie alternative)
Preheat the grill. Trim the stalk end of the sprouts and pull the leaves apart. Put on 2 baking sheets. Drizzle over the olive oil and paprika, if using.
Grill for 2 minutes. Toss the leaves to mix. Sprinkle on the walnuts, then cook under the grill for a further 2-3 minutes until the edges of the leaves are slightly browned. Sprinkle the cheese over the top and serve.
