Sriracha prawn lollipops
- 40g unsalted butter
- 1 clove garlic, crushed
- zest 1 lime
- 1⁄2tsp chopped coriander
- 2tbsp sriracha
- Fishmonger’s Selection Raw King Prawns
- lime wedges
Melt 40g unsalted butter on a low heat. Add 1 clove garlic, crushed, zest 1 lime, 1⁄2tsp chopped coriander and 2tbsp sriracha, then leave for 5 mins.
Thread 2 Fishmonger’s Selection Raw King Prawns onto 8 skewers, top to tail. Brush with the butter and grill for 2-3 mins on each side until the prawns are cooked.
Serve with lime wedges and a sprinkling of chopped coriander.
