Ingredients
  • 50g caster sugar
  • 1 level tsp fine salt
  • 1/2 level tsp chilli powder
  • 1/2 tsp cayenne
  • 1/2 level tsp smoked paprika
  • 1 medium egg
  • 500g mixed raw nuts, such as almonds, pecans, walnuts, brazils, pistachios and cashews
Method
  • Pre-heat the oven to 140C/120C Fan/Gas 1. Line 2 baking trays with baking paper. Mix the sugar, salt and spices.

  • Separate the egg. Whisk the egg white until foamy. Add the spice mix and whisk until evenly mixed.

  • Add the nuts and stir to coat. Remove and spread out on the trays.

  • Bake for 30 minutes. Stir around using a large spoon to separate them. Return to the oven for 15-20 minutes. Lift the paper onto a wire rack and leave to cool.
