Sweet and sticky drumsticks
- 1.1kg pack chicken drumsticks
- 2tbsp runny honey
- 1tsp sesame oil
- 2tbsp reduced-salt soy sauce
- 2 cloves garlic, crushed
- 2cm piece ginger, finely grated
- 1 red chilli, finely chopped
- Juice ½ lemon
- 1tbsp sesame seeds, toasted
- 2 spring onions, finely sliced
Make several slashes in each drumstick and put in a large bowl.
To make the marinade, mix the honey, sesame oil, soy sauce, garlic, ginger, red chilli and lemon juice. Pour over the chicken drumsticks and toss to coat. Cover and refrigerate for at least 30 mins or overnight.
Preheat the oven to 180C/160C Fan/Gas 4. Transfer the drumsticks to a baking tray and bake for 25-30 mins, turning from time to time until the chicken is cooked through and the marinade is sticky and reduced.
Preheat the barbecue or grill to medium. Grill the drumsticks for 4-5 mins on each side until starting to char. Sprinkle with the sesame seeds and spring onions, and serve.
