Ingredients
  • 800g Asda salmon side
  • 4tbsp Extra Special Jalapeño Chilli Jam
  • ½tsp ground coriander
  • ½tsp ground cumin
  • 400g pack red grapes, separated into small bunches
  • 3 small lemons, halved
  • 1tbsp rapeseed oil
  • 1 small pomegranate, roughly broken into chunks, some seeds removed
  • ½ x 30g pack mint, leaves picked
Method
  • Preheat the oven to 220C/200C Fan/Gas 7.

  • Lay the salmon on a large, shallow ovenproof dish. Mix the chilli jam, coriander and cumin together to combine, then spread over the fish.

  • Surround the salmon with the grapes and lemon halves, drizzle over the oil, then roast for 20-25 mins until the fish begins to flake and the grapes are wrinkled and ready to burst.

  • Serve garnished with the pomegranate pieces, as well as a scattering of the seeds, plus the mint leaves.
