Ingredients
  • 4 Asda Plain Tortillas
  • 90g baby spinach
  • 200g Asda Frozen for Freshness Sweet Potato Chunks, thawed
  • 395g tin Asda Taco Mixed Beans in a Spicy Tomato Sauce
  • 120g Asda Grated Cheddar & Mozzarella Cheese Blend
Method
  • Preheat a large nonstick frying or griddle pan over a medium setting.

  • Add the spinach and sweet potato with a splash of water and cook until heated through and wilted. Tip onto a plate.

  • Add a tortilla and cover half of it with half of the spinach mixture, beans and cheese.

  • Fold over the other half and cook for 2-3 mins until char lines appear. Gently flip and cook for 2-3 mins. Transfer to a plate and keep warm.

  • Repeat to make 3 more. Slice each into 3 wedges to serve.
