Sweet potato and bean quesadillas

- 4 Asda Plain Tortillas
- 90g baby spinach
- 200g Asda Frozen for Freshness Sweet Potato Chunks, thawed
- 395g tin Asda Taco Mixed Beans in a Spicy Tomato Sauce
- 120g Asda Grated Cheddar & Mozzarella Cheese Blend
Preheat a large nonstick frying or griddle pan over a medium setting.
Add the spinach and sweet potato with a splash of water and cook until heated through and wilted. Tip onto a plate.
Add a tortilla and cover half of it with half of the spinach mixture, beans and cheese.
Fold over the other half and cook for 2-3 mins until char lines appear. Gently flip and cook for 2-3 mins. Transfer to a plate and keep warm.
Repeat to make 3 more. Slice each into 3 wedges to serve.
