Sweet potato fries with avocado dip
- 3 sweet potatoes (skin on), cut into 1cm-thick chips
- 2tbsp rapeseed oil
- 1tsp smoked paprika
- 1tbsp sesame seeds
- 1 clove garlic, crushed
- 2 avocados, peeled and stone removed
- Juice 1 lime
- ½ red chilli, deseeded and chopped
Preheat the oven to 180C/160C Fan/Gas 4.
Put the chips on a baking tray, sprinkle over 1tbsp of the rapeseed oil, the paprika, sesame seeds and garlic, and toss to coat evenly. Roast for 25-30 mins until softened and slightly caramelised.
Mash together the avocado, lime juice and the other 1tbsp rapeseed oil until smooth. Season with black pepper and stir in the chilli. Serve with the fries for dipping.
