- 4 tbsp cider vinegar
- 1 tbsp caster sugar
- 326g can Asda Smart Price Sweetcorn
- ½ chilli, de-seeded & finely chopped
- 1/2 pointed sweet red pepper de-seeded & chopped
- 1 tsp cornflour
Gently heat the cider vinegar and caster sugar in a small pan until the sugar dissolves. Add the sweetcorn (including the liquid), chilli, pepper and 6 tbsp water. Simmer, uncovered, for 5 minutes.
Mix 1 level tsp cornflour with 2 tbsp cold water and stir into the sweetcorn. Heat until simmering, then turn into a bowl and leave to cool.
