The creature from the houmous lagoon
- FOR THE CREATURE
- 1 green pepper
- 1 cucumber
- 2 stuffed olives
- Cress or dill
- TO SERVE
- 200g pot Asda 30% Less Fat Houmous
- 100g fat-free Greek-style yogurt
- 1 red and 1 yellow pepper, deseeded and sliced
Slice off the top of the pepper and deseed. Cut a 1cm strip of pepper and shape into ‘hands’. Cut a mouth into the pepper with a small, sharp knife. Peel a slice from the cucumber for a tongue, then cut the rest into batons and reserve. Add the tongue to the pepper and finish with olive eyeballs and cress hair.
Put the houmous into a bowl and stir in the yogurt. Position the creature and its ‘hands’ on the side of the dish.
Serve with the sliced veggies, for dipping.
