- 3tsp instant coffee
- 300ml Asda 50% Less Fat Crème Fraîche
- 250g Asda Fat Free Quark
- 50g icing sugar, sifted
- 50g Asda Fat Free Greek Yogurt
- 2tsp vanilla extract
- 2tbsp coffee liqueur
- 24 sponge fingers, broken in half
- 15g cocoa powder
- 50g dark chocolate, shaved into curls
Stir the instant coffee into 100ml boiling water, then set aside to cool.
In a large bowl, whip together the crème fraîche, quark and icing sugar until creamy. Fold in the yogurt, vanilla and coffee liqueur.
Briefly dip the sponge fingers in the instant coffee. Divide ½ the sponge fingers between 6 glasses. Add a layer of the crème fraîche mixture, then most of the cocoa powder, another layer of crème fraîche and the rest of the sponge. Finish with the remaining crème fraîche, dust with the remaining cocoa and top with the chocolate curls.
Chill for at least 20 mins before serving.
