Tomato, chicken & sweetcorn soup
- 1 red onion, chopped
- 2 tbsp sunflower oil
- 1 stick celery, sliced
- 1 tbsp Asda Mild Curry Powder
- 2 x 390g cartons Chosen by you Italian Chopped Tomatoes with Chilli & Peppers
- 350g Chosen by you Cooked Diced Chicken Breast (frozen)
- 100g carrots, sliced
- 4 tbsp tomato ketchup
- 200g portion Asda Steamed Long Grain White Rice (frozen)
- 175g frozen sweetcorn
- Crusty bread, to serve
In a large pan, cook the onion in the oil until soft and translucent. Add the celery and cook for another 2 minutes.
Add the curry powder and cook over a low heat for 1 minute, stirring all the time.
Add the chopped tomatoes, frozen chicken, carrots, tomato ketchup and 200ml water. Heat until simmering, then cover the pan and simmer for 15 minutes.
Add the frozen rice and corn, and return to the boil. Cover and simmer for another 10 minutes. Serve with crusty bread.
