Ingredients
  • 100g Asda Mild and Tender Baby Spinach
  • 220g Extra Special Baby Plum Tomatoes, halved
  • 375g Asda Ready Rolled Puff Pastry
  • 60g Asda Goat's Cheese, crumbled
  • 1 egg, beaten
Method
  • Preheat the oven to 190C/170C Fan/Gas 5.

  • Place the spinach in a saucepan over a low heat, cover with a lid and steam until wilted. Pour into a sieve, leave to cool, then squeeze out any excess liquid.

  • Drain any excess liquid off the tomatoes and pat dry with kitchen paper.

  • Roll the pastry onto a baking tray and lightly core a 1cm border around the edge.

  • Layer the spinach and tomato slices onto the pastry and crumble on the goat’s cheese.

  • Glaze the border with the beaten egg and bake on the top shelf of the oven for 30-40mins until golden, risen and the tomatoes are cooked. Serve warm or cooled.
