Ingredients
  • 4 Grower’s Selection Vine Ripened Tomatoes
  • 250g pack Extra Special Hand Picked Aromatico Tomatoes
  • 1tbsp rapeseed oil
  • 1tsp dried oregano
  • 1tbsp red wine vinegar
  • 1tbsp caster sugar
  • 375g sheet Asda Ready Rolled Puff Pastry
  • ½ x 25g pack basil leaves
Method
  • Preheat the oven to 200C/180C Fan/Gas 6.

  • Cut the vine tomatoes and Aromatico tomatoes into halves. Scoop out the seeds and discard.

  • Put the tomato halves in a bowl with the oil and oregano. Toss gently to coat.

  • Arrange the tomatoes, cut side up, in a 23cm nonstick ovenproof frying pan – space the larger ones out evenly, then fill in the gaps with the small ones. Cook over a medium heat for 8 mins or until slightly softened.

  • Mix together the vinegar and caster sugar then drizzle over the tomatoes. Top with the pastry and trim as necessary.

  • Bake for 40 mins until the pastry is golden.

  • Sprinkle with basil leaves and black pepper to serve.
