Tomkin tomato penne
- 1 x 500g Asda Fresh Egg Penne pasta
- 2 x 220g Asda Extra Special Tomkin tomatoes, halved
- 50ml Olive Oil
- A few sprigs of fresh thyme, leaves only
- 3 cloves garlic, roughly chopped
- 1 bunch fresh basil
In a large frying pan, heat the oil over a medium heat. Add the tomatoes, garlic, thyme and half the basil; season to taste.
Cook for 10 mins, then crush the mixture with a wooden spoon.
Meanwhile, cook the pasta according to pack instructions, drain, reserving a few tablespoons of the water to loosen the sauce, if needed.
Add the pasta to the tomato sauce and stir. Serve garnished with the remaining basil.
