  • 1 cucumber
  • Pinch of salt
  • 1 garlic clove, crushed
  • 250g Greek-style yogurt
  • 2 tbsp fresh mint, chopped
  • Peel the cucumber, then cut it in half lengthways and scoop out the seeds.

  • Grate the cucumber on the coarse side of a grater, or you can cut it into very small dice if you prefer. Put in a colander, standing over a bowl, and sprinkle with a pinch of salt. Leave for 20 minutes and the salt will draw out some of the water.

  • Wrap the cucumber in three layers of kitchen paper and squeeze lightly to remove more of the moisture.

  • Mix together the crushed garlic clove, yogurt and fresh mint.

  • Stir in the cucumber and chill until ready to serve.
