Ingredients
  • 1 Extra Special British Whole Duck
  • 1tbsp clear honey
  • 1 orange, thickly sliced
  • 1 head garlic, halved
  • Handful watercress, to garnish
Method
  • Preheat the oven to 220C/200C Fan/Gas 7.

  • Put the whole duck in a roasting tin. Pat the skin dry with kitchen paper to help the skin crisp up.

  • Prick the duck all over with a fork and season generously with freshly ground black pepper.

  • Roast the duck on the middle shelf of the oven for 20 mins per 500g, plus 20 mins extra. Use a spoon to baste the duck with the melted fat every 10 mins during cooking.

  • About 20 mins before the duck finishes cooking, brush it with the honey and add the orange slices and garlic to the roasting tin.

  • When cooked, remove the duck from the oven and rest for 20 mins on a serving dish.

  • To serve, squeeze the orange slices over it and garnish with the garlic and watercress.
