Ultimate roast potatoes
- 15 large King Edward potatoes, peeled and halved
- 440g of goose fat
Preheat oven 210F 230C.
Place potatoes in a large pan and cover with cold water.
Bring to the boil and cook for 2 minutes.
Drain the potatoes in a colander and briefly shake them around to roughen up the edges.
Add the goose fat to a large hot roasting in, and pour in the potatoes and optional sprinkle with sea salt.
Roast for 30-40 minutes shaking halfway through.
