Veggie sausage traybake
- 270g pack Plant Based 8 Meat-Free Sausages
- 2 red onions, quartered
- 1 courgette, thickly sliced
- 200g cherry tomatoes
- 200g Frozen for Freshness Sliced Mixed Peppers
- 2tsp dried mixed herbs
- 2tbsp rapeseed oil
- 2 x 250g packs Asda Basmati Micro Rice
- 1tbsp balsamic vinegar
- 10g flat-leaf parsley
Preheat the oven to 220C/200C Fan/Gas 7.
Put the sausages, red onions, courgette, cherry tomatoes and frozen mixed peppers on a large roasting tray. Scatter over the dried mixed herbs and drizzle over the oil, then toss together until evenly coated.
Roast in the oven for 25-30 mins, tossing occasionally, until evenly golden and the sausages are piping hot.
Cook the micro basmati rice according to the packet instructions.
Remove the traybake from the oven, drizzle over the balsamic vinegar and garnish with the flat-leaf parsley. Serve with the rice on the side
