Ingredients
  • 2 medium bananas, peeled
  • 4tbsp coconut oil, melted
  • 80g light brown sugar
  • 2 large eggs, beaten
  • 1tsp vanilla extract
  • 1tsp cinnamon
  • 3 Weetabix biscuits, crumbled
  • 175g self-raising flour
  • ½tsp bicarbonate of soda
Method
  • Preheat the oven to 200C/180C Fan/Gas 6. Line a standard 1L loaf tin with baking paper.

  • In a large bowl, mash the bananas until smooth. Stir in the melted coconut oil, the sugar, eggs and vanilla extract until combined.

  • Mix in the cinnamon, crumbled Weetabix, flour and bicarb until it forms a thick mixture.

  • Pour into the prepared tin and bake for 40-45 mins, until the top is a deep golden brown and a skewer inserted into the middle comes out clean.

  • Allow to cool in the tin for 15 mins, then turn out and peel off the baking paper. Cool completely on a wire rack before slicing to serve.
